Lili’s Gluten-free, Grain-free Banana Coconut “Pancakes”

We have to admit it– we love breakfast and we love pancakes. But it is hard to enjoy some of your favorite meals when you are trying to avoid gluten, grains and excessive sugars and carbs.

That`s why we were so excited when we discovered these delicious paleo pancakes. All the flavor without the guilt. These pancakes are gluten-free, grain-free, low in carbs and loaded with healthy protein and “good” fats.

INGREDIENTS:

  • 2 Free Range Organic Eggs
  • 2 tablespoons (or 30g) coconut flour
  • 1 Banana
  • 1 pinch of Cinnamon
  • 1 pinch of Unrefined Sea Salt
  • 1 pinch of Baking Soda

Optional Toppings (keep sugar content low):

  • Nut Butter (Hazelnut, Almond, Peanut, Cashew, etc.)
  • Coconut (flakes or shredded)
  • Fresh Fruit
  • Fresh Whipped Cream or Yogurt
  • Be creative!

DIRECTIONS:

Mash the banana with a fork. Crack the eggs into a bowl and whisk them as if making scrambled eggs. Mix in the remaining ingredients. Preheat (medium heat) and grease your frying pan with organic grass-fed butter or organic extra-virgin coconut oil. Pour the batter into the frying pan and cook each side until lightly browned (note: smaller sized pancakes are much easier to flip). Place your favorite topping on top and serve.
